My wife and I are going on a cruise and I was wondering if anyone has ever tried this. I'm going to throw a disc off the ship ( one that floats o'course ) and put my name, phone number, and when and where I threw it off and see if anyone finds it.

Put on the disc name , date , where found and throw back into the Ocean !
Probably not a great idea. I would imagine there would be a heavy fine if you were to be caught by a ship employe or a guest and reported. You may possibly risk being escorted off the ship. Cruise ships are loaded with cameras.

The threat to marine life is a real one. So if all these risks are worth watching a disc fly for 3 seconds and crash into water. Go for it. I think they look best landing in the basket ;)
