My wife hardly goes out discing with me ever but when she does she feels bad because she can't get off the tee.  I told her we need to start looking for some different drivers for her.
She doesn't go out enough to actually work on her form she just likes to go out and have a good time sharing a day with me.

So, here's the question...what's your opinion on the best overstable driver that will help her feel better and have a bit more fun out on the course?

Overstable? If shes not getting good distance overstable is probably not going to help much. I would try some 150 class discs. A diamond by Lat. 64 is a great beginner/ user friendly disc, but most 150 gram discs should help her out!

also look at the roadrunner, but as said, the diamond is the perfect starter disc

150 diamonds and 150 surge are what my gf bombs with. 

Maybe she needs an understable driver like a Sidewinder and possibly a few tips. I would worry about getting good technique first and then one can worry about the plastic. Proper footwork followed by proper arm work are necessary. The plastic will make a difference but can't make up for bad technique.

I would say a Diamond again, OR, a 150 Class Leopard. Those Both fly Forever!

Skeeter. One disc will do it all.

It might do her good to get a mid and use it as a driver? If she can only generate an arm speed of around 5 to 8 (Innova flight chart). It won't do her any good to get a driver. Some disc to consider (150 class or lower). Roc, Buzzz, Leopard, TL, Teebird, Dragon, Roadrunner, Vision, and possibly a Sidewinder. I'd really consider a mid though.

No overstable drivers give her an understable mid until she can get it out there pretty consistently. I would go with a Stingray
