I know people are going to go nuts on the Roc. It is a very popular disc. Here's my question though. I throw rhbh and sidearm. I throw a star skeeter or star aero for approaches, mostly rhbh. However, there are times when I need to throw sidearm. The skeeter is too flippy because I can get more power and snap with my sidearm throw. I'm looking to the shark or the roc for a sidearm release, and also for those windy days. What's your opinion and why? Not just, "Get ___. It's great!" Why is it great?

I throw both the roc handles my side arm aproaches a little better,but the shark finishes a little softer with less fade.If im in a spot where i need to land softer i will throw the shark.But if there is no real danger close to the basket,water,trees,anything that might cost you more strokes i will throw the roc.Try the heavier weights they will handle the sidearm better.
Can't speak for sidearm, but mild to mod windy days I like the Roc, but I also throw it in SE plastic. So I understand it's more overstable than the Pro plastic. I know when it it is a truly WINDY day. I don't even use my Roc. I use a Millinnium Q Sentinal or a Z Drone. I just found the Roc couldn't handle a good headwind without some hyzer on it and even then it was a toss up. The Sentinal is a great windy day disc and the Drone is as well, but with a little more "D" than the Sentinal.
I carry both Roc and Shark. For your problem, I would lean toward the Roc since it's a little more overstable and harder to turn over than the Shark.

a whippet will handle a sidearm approach very well. pretty much no way to flip it. i'd stick to your skeeter on rhbh for regular midrange but the whippet can handle any wind sidearm or bh. this disc can also be thrown for D and spike hyzers! super super overstable
gator for windy days i use it for short side arm and most of my backhand drives under 300 feet predictable and near impossible to flip over , i like the roc more then the shark i found the shark to flippy and unpredictable and the roc will be a great backhand disc when it breaks in for dead straight shots .
I just got a Star Coyote, I've been trying out on my sidearm approach shots seems to work pretty good, sank about a 75 footer on thanksgiving in a 25 mph wind, only birdie i got that day.
When I have to throw a FH approach I tend to find myself reaching for one of two discs. I reach for my champion Spider or my Buzz. I like both cause they can hold a line for me. As for a windy day Like it was today in Pickwick TN, I was reaching heavily for my Gateway Prototype. I just ordered a Z plastic Buzz and a Roc. I have also thrown the Gator and that seems to be for me a great predictable disc for both BH and FH approaches that holds a line in winds.
Champion Sharks are overstable. Great approach disc too !!
I have not used a champion Shark but I own a champ Roc and IMO it is overstable (2008 USDGC San Marino stamp) so for those types of shots this disc does the trick. Personally I would rather use a newer Z Buzz for this type of shot because I know that even when thrown anny that this disc will come back and finish with right.
I appreciate all the responses. I was telling some of the guys in our Sunday handicaps about my need for a more stable midrange, and then my next shot I needed it. Some of the suggestions that have been made (Buzzz, Coyote, Gator, Drone) I have thought about, and I will need to add to my deliberations. I have to admit that I'm leaning toward a heavier Shark, though. Maybe 170 to 175 gram disc.
I would sugest neither! I have owned a few of both and the inconsistancies are overwelming. I would sugest a wasp, or a drone.
