I organize by color. I get forgetful on the course sometimes and leave a disc behind. The organization of color allows for instant recognition if something is missing.
drivers on one side, mids and approaches on the other. I've tried to order them by stability but that's dumb because I always look for the color anyway.
I wouldn't say organizing by stability is dumb, I always look for color also but all of my discs are orange.
1st pocket 8 specialty drivers in ABC order: 2 firebirds, 2 sidewinders, 1 starfire, 2 tbirds, 1 tl

2nd pocket 7 distance drivers in ABC order: 2 boss, 1 destroyer, 2 xcaliber, 1 valkyrie, 1 wraith

3rd pocket 4 upshot discs/mids in ABC order: 1 gator, 1 rhyno, 2 rocs

front pocket 2 putters: 1 p&a aviar, 1 jk aviar

it's the organization that suits me...
Organized? never! that sounds like work.
I put all the round ones in one place.
conformist!
Not if they're all turned different directions....reverse, sideways, upside down, left to right, right to left, backwards.
By Color - red, orange, yellow, green, blue, purple, then all my white ones.

I count the nunber of colored discs and then the number of white discs, then try to remember to recount every few holes.
Drivers , Mid-Range , Putters. Anything else is to confusing when playing quickly. Keep it simple.
