I like to use low turn and fade discs in strong winds but i am wondering if there are better options. Maybe heavier discs or something ultra stable.

Max weight Pro Line Monster or CE Firebird depending on the shot I need. Sometimes even my Excalibur.
Champ boss is prolly your best bet, but watch out for the flip. (like everyone else is saying)
The Max,Starfire, and Teerex-x are my top three, but its more about how you throw into the wind than what you throw.
Max or monster most definately, in strong wind heavy is good
I learned a valueable lesson this last weekend in a tourney in junuea ,ak.The winds were gusting 30 to 40 mph and the winning disc that weekend was a star excal .my 2 destroyers got just that, destroyed!.I screwed up and took my firebird and groove out of my bag to save weight and my miscalculation on hole lenghts cost me alot of strokes.and my destroyers are 173 champ and 169 pro ,very dumb move on my part .I learned the definition of stability this weekend ,there will be 2 excals in my bag shortly.
