It sounds like the games you are looking for are cooperative, team-building exercises. The games I create are competitive ones that place a premium on performing under pressure and developing particular shots. If I am reading your situation right then my type of games might be counterproductive to your goals, since someone always wins or loses.
My inclination is that if you want to include disc golf in your activities you should make teams as equal as possible (pairing the least athletic with the most athletic) and have them play best shot. The teams with the best athletes will still win but the poorest athletes won't be as embarrassed since they will be carried by their partners. Or don't give them scorecards or even tell them not to keep score.
Do-Run-Run is a flexible game for players of various numbers and skill levels but it would take a bit to explain and may not be what you are looking for. I have created lots of different games and regularly design games for the particular situation at hand. If you let me know what situation you anticipate I can give you recommendations.
I have one of your discs. We need to get togather and play sometime soon.
